Frozen: buy by Monday, December 14, 2026. Fresh: buy 1 to 2 days before cooking, so Wednesday, December 23 or Thursday, December 24. Dinner is Friday, December 25, 2026.
The calculator stamps this date eleven days before dinner and labels it kitchen practice, not a USDA date. Frozen birds sell out the weekend before Christmas; the hard dates come from the thaw.
A frozen bird bought by December 14 waits in your freezer until its fridge day:
| Weight | Move to the fridge |
|---|---|
| 12 lb | Tuesday, December 22 |
| 16 lb | Monday, December 21 |
| 20 lb | Sunday, December 20 |
| 24 lb | Saturday, December 19 |
Full dates for every weight are on when to take the turkey out of the freezer. Not sure what weight to buy? Start with how much turkey per person: one pound each.
Fresh: buy 1 to 2 days before cooking. A fresh bird goes from the store to your fridge, at 40 F or below, and into the oven on Friday.
Late either way? A frozen bird can still thaw in cold water: Seal the bird in a leak-proof plastic bag. Submerge it in cold tap water. Change the water every 30 minutes. Cook it right after it thaws.
USDA's third safe way is the microwave: follow your microwave manual for size and timing, and cook the turkey right after it thaws. Never thaw a turkey on the counter. The outside warms up hours before the inside thaws. Bacteria grow in that warm layer.
Tell the calculator your weight and dinner time for the full plan. Or ask in your own words: "16 lb turkey, dinner Friday at 5."
