Thaw times come from USDA charts.

Roasts use the USDA 325 F chart.

Some steps use kitchen practice instead.

All times are planning estimates only.

Your turkey may need more time.

Never thaw a turkey on the counter.

Use a meat thermometer when in doubt.

The bird must reach 165 F.

Check the thickest part of the breast.

Check the innermost thigh and wing.

Color is not a reliable signal.

Change cold water every 30 minutes.

Cook right after cold water thawing.
