ThawDay

Can you thaw a turkey on the counter?

No. Never thaw a turkey on the counter. The outside warms up hours before the inside thaws. Bacteria grow in that warm layer. The fridge and cold water are the safe ways, and both are on this page.

Why the counter fails

A frozen turkey thaws from the outside in. On the counter, the surface reaches room temperature while the center is still ice. That warm surface sits for hours, which is exactly the layer you eat first. The bird can look fine and still be unsafe.

Already left one out? A turkey that sat out for more than 2 hours cannot be made safe, by cooking or by freezing. Throw it out.

The safe ways, with times

The fridge is the hands off way: about 24 hours for every 4 to 5 pounds, at 40 F or below, on a tray, in its wrapper. Cold water is the fast way: 30 minutes per pound.

Cold water, step by step: Seal the bird in a leak-proof plastic bag. Submerge it in cold tap water. Change the water every 30 minutes. Cook it right after it thaws. Full steps: thawing a turkey in cold water. The sink counts as cold water only when the water stays cold and changes on time: see thawing a turkey in the sink.

USDA's third safe way is the microwave: follow your oven manual for size and timing, and cook the turkey right after it thaws. Never thaw a turkey on the counter. The outside warms up hours before the inside thaws. Bacteria grow in that warm layer.

Your exact dates, in seconds

Tell the calculator your weight and dinner time. It stamps the thaw, the oven time, and the rest. Or ask in your own words: "16 lb turkey, dinner Thursday at 5."
